The grapes are harvested by hand and pressed directly upon arrival at the company. Everything happens quickly to avoid the loss of aromatic precursors particularly sensitive to the heat of September days. After fermentation at a controlled temperature, to keep the product always fresh and preserve its bouquet, the temperature is lowered to about 0°C and the refermentation in the autoclave takes place only after choosing the bottling period (dioise method).
Excellent accompaniment for fruit and jam-based tarts, simple homemade biscuits or dried fruit-based biscuits. It can also be used creatively on cups made with yellow-fleshed fruit.
